Sucrose sucrose fructosyltransferase (SST)

This part is the coding sequence for Sucrose:sucrose 1-fructosyltransferase isolated from jerusalem artichoke mRNA.

It Catalyzes sucrose to the three products: D-sucrose, beta-D-fructofuranosyl-(2->1) and alpha-D-glucopyranoside, as such:

2 sucrose -> D-glucose + beta-D-fructofuranosyl-(2->1)-beta-D-fructofuranosyl + alpha-D-glucopyranoside.
